IRISH MOSS
Irish Moss is neutral in taste and color and a multifunctional thickener, a binding agent in smoothies, soups, cakes, ice cream, etc. Irish moss contains 75% of all amino acids you need and is a source of selenium, copper, iodine, zinc , molybdenum. Nutrient-rich, low in carbohydrates and fats, saturated and yet easily digestible, it is an ideal addition to almost any diet.
NATURALLY GROWN
This Irish moss grows in its natural environment, the ocean, and is very suitable as a healthy thickener. Machinery, basins, tanks, containers and/or mass production are not used. It is wild-crafted and harvested by hand and then dried in the sun. Because it is a natural product and depending on many factors such as weather conditions, season, wave action and handwork, Irish moss can vary in colour, size, moisture and binding capacity. During the drying process, natural salts are released from the Irish moss. This means that no extra salt needs to be added.
Irish moss thrives best in the ocean with a strong current and the right temperature. This makes it firmer and produces more carrageenan. This is a natural and healthy carrageenan, unlike the factory carrageenan used in many products. If the product is rich in carrageenan, it may in some cases require a longer soaking time than indicated.
PREPARING IRISH MOSS
Irish moss can absorb 3 to 5.5 times its own volume of water during soaking, depending on what you want to use it for. It can then absorb a lot of water in the blender due to its high binding capacity. Therefore it is very suitable for a thick paste such as in pies, ice cream and pudding. By adding more water to the paste you can also make a thinner substance, suitable for smoothies, soups and sauces. Irish moss requires a good powerful blender which makes the substance firm, smooth and even. With a less good blender at home you can add a little more water, make a less even substance or use it as a whole food in your food. A great trick is to add lemon juice at the end of your soak, which will give it a wonderful fresh taste and smell.
